Sausage Balls


The second appetizer Chris and I had during the Mad Men premiere were my mother's sausage balls. These require minimal ingredients and are easy to make as long as you don't mind getting your hands dirty!



To make the sausage balls you need 1 pound of hot sausage, 1 cup of shredded sharp cheddar cheese (I used a 2% variety), 2 cups of baking mix (Bisquick), 1/4 cup of milk (I used skim), and 1 teaspoon of paprika.


First things first, preheat your oven to 350 degrees, and shred that cheese! (You can also use pre-shredded, if you want to make this super easy).


Once you've measured out a cup of cheese, throw your sausage into a bowl, breaking it apart a little as you go.


Add the cheese to the sausage.


Now add the 2 cups of baking mix, making sure to level out your cups.


Follow the baking mix with the 1/4 cup of milk.


Finally, add 1 teaspoon of paprika.


Now comes the fun part. Use your hands to mix together the sausage, cheese, and dry ingredients.


Continue to mix until completely combined, while ensuring there isn't a pile of baking mix underneath your gigantic sausage ball.


Next we want to form the mixture into small balls, like so.


Line your balls up on an ungreased baking sheet. Bake for 18 minutes at 350 degrees.


Remove the finished balls from the oven and plate. Serve with a cocktail and enjoy! These are really so delicious! Chris and I barely had any leftover!

Makes about 2 dozen

1 lb hot sausage
1 cup shredded sharp cheddar cheese
2 cups baking mix (Bisquick)
1/4 cup milk
1 tsp. paprika

Preheat oven to 350 degrees. Add all ingredients in mixing bowl. Use hands to mix the sausage, cheese, and dry ingredients until completely combined.

Form mixture into small balls and place on an ungreased baking sheet. Bake at 350 degrees for 18 minutes.
